Blueberry Cheese PancakesIngredients11/2 cups cottage cheese4 eggs1/2 cup flour1/4 cup sugar2 Tbsp butter, melted2 tsp vanilla1 cup blueberriesProcedureCombine cottage cheese, eggs, flour, sugar and butter in a bowl; mixwell. Stir in vanilla; add the blueberries. Cook batter on a hot greased griddle until light brown on both sides; turning once. Serve with room temperature butter and real Canadian maple syrup.
