How to Prep Asparagus for Roasting

Mae sure to wash the asparagus before cooking. Pat the asparagus dry with paper towels.

The thick ends of asparagus can be tough and woody.To remove those parts, cut 1 or 1-1/2 inches from the base with a sharp knife. If your asparagus is extra-thick, use a vegetable peeler to peel off the hard part of the stem.

How to roast asparagus

Roasting asparagus is simple and quick!Toss asparagus with paprika, salt, and pepper. Then drizzle with a mixture of melted butter, lemon juice, garlic powder, parmesan, and Italian seasoning. We do this directly on a rimmed baking sheet while the oven is preheating to 400ºF (200ºC).

Bake until the asparagus is tender approx 15-20 minutes for thick asparagus, 10 minutes for super thin asparagus.

Serve the roasted asparagus immediately, garnished with fresh chopped parsley and lemon slices.

Tips for the roasted asparagus recipe

  • To make your asparagus more tender: You can pre-cook asparagus in the microwave with 1 cup water for 5 minutes, then soak it into ice-cold water before using them.
  • Thin asparagus should be done in as little as 10 minutes. Thicker asparagus will need between 15 to 20 minutes.
  • We find that parmesan is already salty, so go easy on salt at first, then taste and adjust seasoning to your taste.
  • You can use olive oil instead of melted butter.

How to Store Asparagus

The best way to keep asparagus is to place them in a large mason jar or a glass filled with one or two inches of water. You can arrange a loosely wrapped plastic bag over the top to avoid drying up. Then keep asparagus in your refrigeratorfor a couple of days – They will stay fresh longer this way.

What to do with roasted asparagus leftovers?

The roasted asparagus will keep in an airtight container for up to 3 days in your refrigerator. Reheat in the oven, covered with foil. You can cut up the roasted asparagus in smaller pieces for soups or salads.
